With the induction stove my double boiler no longer worked and all the ones I could find were too large. I tried a cheaper item that had non stick coating so you could not use metal utensils and the temperature was difficult to regulate. I saw this on that used water so I thought I would try it. I love it!!! The chocolate tempurature is easy to maintain which makes things so much easier when dipping or doing candy molds. Clean up is super easy. Other than the temperature settings being upside down there is no down side that I have found after 8 pounds of chocolate for the holidays. I even bought extra pans so that while I am working with the ones already melted I can start my next batches.
