Yes you need higher heat tolerant oil. (Olive!) I was concerned about the thin top edge because most of my pans have a strong bent edge that holds the lid in place. In this case the lid has an edge to hold it in place. But the gauge of this metal is pretty heavy so I'm not really concerned about the top edges denting now. They're just so shiny and pretty. I love polished finishes. I get distracted. I would say what sold me was the glass lids and the two bonus non-stick pans.
