If the egg bubbles out the hole, what's the purpose?** A: emen7's answer is correct. Also, 1) If a bit of egg white escapes it's no problem. It's never more than a thin filament for me, but if I warm the egg first, then poke a hole and then suspend it in boiling water hole-side up for a few secs before dropping it in, no egg escapes. Warming it first also reduces chance of cracking since this method calls for dropping the egg into boiling water. Thickness/strength of shells vary a lot, so what works for you now may not work as well on the next egg, or for others. 2) Yes it does make the egg easier to peel, every time for me. 3) What to use? Does 7 boiled, 2 poached or a 2 egg omelet fast and easy. The buzzer is loud and doesn't stop until you push it so no chance of forgetting it and leaving it on. I had to fiddle with the water level to get the yolks exactly like I like them so that took several tries but once I got it nailed, my eggs are perfect all the time. Boiled does from 1-7 eggs so always the perfect amount. Because they are steamed, the eggs are easy to peel. I was worried about 7 eggs at one time but it's a sturdy little unit and I used the biggest eggs I could get with no issues. Poached just POP right out onto the plate, I use just a drop of oil in the pan and no issues with sticking. The omelet pan did require a bit of experimenting to get it right. It's a big pan and the instructions say it will hold 3 eggs but I couldn't get that to work for me without overflowing it. 2 large eggs are perfect if you don't add too many other things, if you like more 'stuff' then 2 medium eggs worked better for me. It's easy to use, just stick the eggs in and push the button. It's super easy to clean since the base wipes off with a sponge-very important or the water will make the metal part brown and gross. The pans and rack are easy to wash and the entire unit stacks for storage. The plastic dome does get hot from the steam but the handle is large and you can grab it without burning yourself - lift away from yourself for safety. The plastic material is better than I expected for the price. It is holding up well with no scratches or deforming from the steam.
