## Description

New Mexico Chiles, Capsicum Annuum, are a chile grown in New Mexico. They may also be called Hatch chile or red chile. These chiles are 4.75"-6.75" long and about 2" wide. with a smooth skin and a deep reddish-brown color. Nestled in the center of the Rio Grande agricultural territory and located 37 miles north of Las Cruces is Hatch, New Mexico, the self-proclaimed Chile Capital of the World of the World. The soil and growing conditions in the Hatch Valley are said by locals to create a unique terroir (similar to wine terroirs) which is responsible for the flavor of chile grown there.

Review: Using this for Texas Chili - I am using these peppers plus pasilla peppers plus gaujillo peppers for a Texas Chili recipe that uses seven of these peppers. My recipe for authentic Texas style chili uses no beans, no tomato products, no chili powder, and no jalapeños; mostly just meat, water, and a puree made from the peppers, plus an onion and cumin. Very different from my go-to recipe and very good, gives me some variety during Chili Season. I've already made the recipe three times and it looks like there are still enough peppers to make it at last six more times. They come very dried out (pepper paper!), the first part of the cooking process is to 1) toast them, 2) add water and soak, and 3) puree them. I don't understand how toasting the dried peppers makes them more "pliable," I guess it is bringing out the oils (?). *** 9-26-24 *** I could not find these peppers in the local grocery stores, not even the local Mexican grocery store, because I was looking in the fresh produce section (I was thinking like jalapeño peppers or poblano peppers). I later found two of the three in the grocery store Hispanic aisle as dried peppers the same as I found here on desertcart.
