The cooking and stirring on the stove is what will thicken and smooth. I think if you do it in the microwave, it will be lumpy. **Q: Do you have to have the butane torch for this?** A: The carmelzing sugar is in the package and you can do it under the broiler, or with a torch. Remove the ramekins from the roasting pan and refrigerate for at least 2 hours and up to 3 days.
