The bread did rise about 4” in a 9” x 4” pan, so we made sandwiches. Good texture and flavor. You use a LOT of eggs. I probably will make my bread from scratch going forward. But that’s more to figure out how to get bread that rose normally at 1000’ also rise the same way at 6200’. I’m looking for a no wheat flour, no yeast (my husband has gout) bread that rises. See pics.Secondly, I hope you like very eggy bread because that is exactly what this tastes like. It’s hard to get over how eggy it is. And I love eggs. I eat eggs every day! I tried putting butter, cream cheese, and tiger nut butter on the bread to see if I can mask the flavor at all. I would suggest a very strong flavor like a nut butter. Just plain old butter does not hide the egg flavor.The texture of the bread is not bad. It’s fairly soft. I’m going to freeze my loaf and I will probably have it for a long time because I honestly don’t love it. But it’s nice to have bread as an option.
