This high quality unpasteurised miso is carefully made to a traditional recipe and fully aged in cedarwood kegs for 1 to 2 years. It adds a rich flavour and concentrated goodness to sauces, baked dishes, soups, and beans, and also makes an outstanding miso soup. Miso is a very versatile seasoning and can be used to flavour soups, stews, and bean dishes, as well as gravies, dips, spreads, pickles, salad dressings, noodles, grains, tofu, and grilled dishes. 1 tsp of miso seasons about 1 cup of liquid — dissolve in a little water then add towards the end of cooking. To maximise the enzymatic benefits, avoid bringing to the boil once miso has been added. Salt plays an integral part in fermented foods and acts as a check to the fermentation process. Miso is a concentrated seasoning — use approximately 1 to 2 teaspoons of miso as a substitute for ¼ teaspoon of salt. Best stored in a cool cupboard or refrigerator.
