I bought this because of the material it’s made from, and also because it comes with a dough scraper, which I didn’t have. It is wider than a standard sheet pan, which is great because it keeps the dough from touching the pan sides while it proofs, and of course it is longer than the standard sheet pan; I only made three baguettes and was able to fold the remainder of the couche over the loaves while they finished proofing. Was easy to fold up into sections for each loaf. Dusted it with flour, was easy to remove baguettes. After transferring them to baguette pan, took the couche outside to shake off the excess flour. Will brush it with a dry vegetable brush in a bit. Very happy with this! It’s nice to have this committed cloth for proofing rather than cycling through tea towels. Also, the dough scraper is great, and I really love and appreciate that it is a part of this product package. It is sturdy, with nice sharp edges, but flexible enough to curve easily with some pressure so that the bowl can be scraped out very easily.
