I wanted to remove the pits before cooking, however, so I soaked them in water to soften them, and tried several methods, all of which resulted in cutting or tearing the plums into pieces. I found out that the dish is traditionally cooked with the pits in, so I put the rest of them in whole. The dish was successful in many ways, but it was disappointing that I was unable to prepare it the way we wanted it. So, it you just want this as a snack, or will cut them up anyway, or if you will cook them with their pits, by all means go for these, they are good. Just don't think you're going to be able to turn them into whole pitted plums.
