Always skeptical due to the blood sugar impact many products have while claiming to be low carb. Everyone is different and finding the right products (outside of cooking whatever it is myself), can be challenging. Bought this and while a little pricey, followed the cooking instructions and tested the texture and flavor, While a little chewy and a little sticky on the teeth, the flavor was pretty good. Decided to try with a homemade LC cheese sauce and again, chewy but tasty. Tested blood sugar prior, 2 hours later then 3 hours and still 100% stable (I did correct after eating with 3 units of fast acting). Usually, the reaction climbs after a few hours but even after that one correction, still stable. Will see what the final result is next day. So far though, very pleased and amazed this was made available.
