It only took a few tablespoons to add great depth and complexity to a soup, sauce, or stew, and one tube lasted a long time, as you could reseal it. I’ve been using a variety of concentrated tomato pastes, but not long ago I read that Mutti is the biggest selling brand of tomato paste in Italy. That means something, as Italy is a country where people take cooking and ingredients seriously.
