## Description

In Spain paella is cooked in a special low-edged pan, preferably over an open wood fire, but this quick and easy 'cheats' recipe uses chorizo, frozen peas and a packet of mixed seafood - and can be made in wok.  Soften a chopped onion in olive oil and then add chopped 100g chorizo and two teaspoons of paella seasoning. After a few minutes stir in 300g rice until coated by the oils. Gradually add 1 litre stock and bring to the boil, simmer for 15 minutes stirring occasionally.
