It mixes up quickly, and the texture is moist and soft. Waaaaaaaay better than the store brand sold at my grocer. I like to cook twice - the first time is to "set" the tortilla. Then I store them in my fridge until I'm ready to eat them, and I cook them a second time for whatever I'm making, whether tacos or a quesadilla or a "Mexican" casserole.
