Our Pai Mu Dan white tea (also known as White Peony, Bai Mu Dan, or Pai Mu Tan) is a classic light and fruity tea grown in Fuding, Fujian Province, South-East China. This tea was invented as a gift to the Emperor during the Song dynasty in China. The tea leaves are made from plucks each with one leaf shoot and two immediate young leaves, harvested from Fuding Da Bai cultivar tea bushes in early spring. White teas, such as Pai Mu Dan, are slightly oxidised. The plucks are gently sun-withered for several days, and then briefly piled for oxidisation. The small young leaves, when brewed, yield a pale gold liquor, mellow and fruity to taste with a long Peony aftertaste. This tea is harvested and processed in Fuding County, north of Fujian Province, on the south-east coast of China just below Shanghai. Fujian province is one of the chief producers of tea in China, with many high-quality white, oolong and green teas grown in the mountainous areas. The region also has an extremely long and detailed history of producing tea dating back over 1,600 years. The tea from Fujian province is characterised by the area's subtropical climate - dry winters and wet summers.
