But if you really love a perfect risotto this is what you need. I used to always make it with Arborio rice because it was readily available at the grocery store, which does a fine job. But the Carnaroli barely needs to be stirred to get it to release its starches to make a creamy sauce and the texture is a little better. If you like risotto you've probably seen the Youtube videos where they sit over the pan for half an hour constantly stirring but with this rice that just isn't needed. I use a whisk to stir and I think that makes the grains release their starch more easily than a spoon.Be sure to buy real ungrated Parmesan Reggiano (I use a food processor to chop it into small grains vs an arm workout with a grater) and careful with adding salt, the broth/stock and the cheese have a lot already so you won't need much salt if any. ### ⭐⭐⭐⭐⭐ Delicious and very good quality *by P***E on November 28, 2023* I used Riserva San Massimo rice to make saffron risotto.
