St. Peters Brewery is situated in beautiful unspoiled countryside in north Suffolk close to the historic market town of Bungay. St. Peters Hall is the centerpiece of the brewery site and dates from around 1280. In 1539 the East wing was added using materials from the nearby Flixton Nunnery, which was one of a dozen Monastic houses given to Cardinal Wolsey by King Henry VIII to finance the building of a school in Ipswich, Suffolks county town. Then as today, Suffolk barley was carefully malted to brew beers and that tradition lives on today in the St Peters brewery. Following instructions to the letter it was quite a slow fermentation for me so I left the full 2 weeks on primary before racking to cornykeg. But only another 1-2 weeks needed to condition/dry-hop. Mine turned out very smooth and bitter, almost like cask aged beers from a pub. well worth the wait and the effort. However finings aren't necessary as the beer will clear naturally if following the instructions. Home Brew Online **Q: Do the kits have a best before date?** A: If you mean the best before date on the ingredients then yes, bought a second batch as my first didn't last long, too moorish. But checked the dates on the second batch, only recently arrived, yeast is good until Feb 2018, Malt is good until July 2016, hope that helps. If you meant how long after brewing and bottling until its goes off, I'm not sure, as people say try and leave it six months to condition fully before drinking, I would guess at least a year probably more, but you will drink it long before. **Q: Can you direct me to kits where I don't need anything else, this will be my first time doing a brew and I'm unsure on what to buy. Thanks** A: BryanI'm relatively new to home brew too (that's poetic) anyway you'll need a kit such as this, which are good as are any of the Woodford ones if you haven't tried them . A large barrel or bucket to mix everything in with a sealable lid this will allow it to ferment and will prevent oxygen from getting in whilst it is doing this and then depending on whether you will be bottling it or putting it into a barrel a batch of brown bottles or barrel with a tap at the bottom. I don't drink mine that quickly so I bottle them and have bought some crown caps and a capper. you can get them on Amazon for about Β£10-Β£15 but I got mine from Wilkinson's if you have one near to you or you can order on line from them now. they also sell the crown lids as well as everything else for home brew. You can buy the bottles from them aswell for about a fiver for 6 though I went to Lidl and bought some of their excellent bottled beers they have a great range of real ales for Β£1.25 each. I simply bought forty bottles of beer, over a period of about 6 months and, once they'd been emptied soaked them in soapy water so the labels came off. You will also need to buy some sterilising powder which you'll need to use to clean out your barrels and any equipment you use once you've finished. This kit was perfect, it brought back the memories of when we sipped on IPA all day in the fields, bringing in the crops for the people all over the UK. It was weaker then, a bit like water, but safer, hence why we drank it all day. So I sipped a bit too much the first night, and found myself waddling down the parish! Luckily Brian brought me back and put me to bed. What a gentleman.
