The regal coffees from this country are deserving of such a heritage and stand up to the calling. Referring to Ethiopia as a country of single origin, however, is misleading. Coffees from the different growing regions vary so incredibly that they do not even seem to be from the same planet! Coffee holds a special place in Ethiopian culture that transcends that of the coffees from other origin countries. The majority of the crop does not even leave the country and is drunk with great ceremony by the Ethiopian people. Starbucks just cancelled their Ethiopian Brand which was what I had been drinking for the last 6 years or so.The flavor profile of this coffee is very balanced without any acidity or much bitterness. I have tried other Ethiopian Arabica cofffes and were very disappointed. Mild roasts all too often are much too acidic often called "citrousy or fruit notes". In fact I suspect this coffee could be just a touch darker than the medium roast that it is. This does not have the "chocolate" notes that the Starbucks Ethiopian had but it is pretty good.
