You can achieve the same effect by using two wooden spatulas to lever food up into the air or move it around. I am expecting this pan to outlive me. UPDATE: I bought two smaller versions of the above pan: the 20cm and 24cm. The 20cm pan is fine, but the 24cm pan refuses to work on my induction hob.
