It is between the sweetness of white miso and the sharpness of red miso, so is very versatile in that you can use it for various Japanese dishes. I like using it for miso ramen, simmering vegetables and soup dishes. It also makes a great sauce if you mix it with a bit of water and use it for silken tofu.
