**Q: Why does it need to be stored at such a cold temperature?**

A: As a fellow consumer, there is not remark to that that I can see on the label or Amazon product description. That said, I think it's the best p-starch available.

**Q: Can you eat this raw, or does it have to be cooked?**
A: You can eat raw. We put potato starch on outside of Mochi skin in Japan to prevent from sticking from each other.
So the answer is yes.

I was watching some really neat informational health vids on type 2 resistant starch and discovered that at 40 grams per day if this (UNCOOKED ONLY!!!) you can start to lose visceral fat! For those that don't know, that's the kind of fat that builds up around your organs and when the fat builds up there, it sort of strangles your organs ability to function properly. So naturally, LOSING that fat is very important. I hear this stuff also starts to reduce the other form of body fat as well which is always good news. Go have a look at the health benefits of type 2 resistant starches for yourself, it's great for MORE than just cooking with! I put it into my morning protean shake; it thickens the shake and depending on the flavor of your protein powder, 100% masks the already VERY mild flavor of this starch. If you ARE adventurous, you can TECHNICALLY drink this down with only water but it's best when put into a shake.
