Are these raw? Also, the ingredients list "organic" cocao, but why is there no certification on the label?** A: These nibs are raw. The flavor is much improved by toasting. I ground the nibs in a coffee grinder, then stirred them in a pan over medium heat until they were dark and smelled chocolatey. They did not melt. Toasting brings out the chocolate flavor, and reduces the acidic/raw flavor notes. I brew ground nibs in a tea pot using a in-pot strainer and 1 tbsp ground nibs / cup of water for 15-20 minutes. **Q: The title says raw cacao nibs but the photo says cocoa nibs...there is a difference, is there not?** A: Seller: You didnt answer the question at all. Are they raw cacao nibs or roasted cocoa? **Q: is your cocoa powder and nibs alkaline free? Non dutch processed?** A: The item is cocoa nibs, not powder. Therefore they can't be dutch processed, since alkaline agents are used to make the cocoa powder, at least for what I know. These are the first nibs that I've bought so can't compare. I do like them. Tried them several ways and found the most satisfactory method is to grind them in a hand operated grain mill to a 'cornmeal' fineness. Use them in hot chocolate (doesn't sink to the bottom like most cocoa). Great for cooking with. Surprisingly not bitter like most. They give a pleasant chocolatey taste to my chia pudding or cashew butter custard. I am usually leery about products that focus so much on quantity to give the impression that you are getting great bang for the buck however, even though these provided a great price for the volume I decided to give these a shot and I was very impressed with the high quality of these nibs. I enjoy tasting the notes in fine chocolates so it would be fun if they were able to say where specifically they were grown so I could try different bags out and see the difference I can pick out. Obviously, since cacao nibs are just broken cocoa beans there is no sugar and have a bit of a bitter flavor naturally. Since the cocoa butter is not removed from the nibs though the bitterness is not nearly so potent as cocoa powder on its own. I love using these for my homemade granolas and puddings. They give such a pleasant taste and texture and since I seek to have minimal if any sweet in my food this has been one item I keep stocked.
