I have used it twice so far: the first time with its removable lining in, to get a smooth surface for cutting a pattern into the bread. You let the bread do its final pre-baking rise in the banneton--probably in the fridge overnight, if you want a firm surface to do the cutting (known as "scoring")--and the rising that takes place due to the heat of the oven makes the cuts open up to expose lighter bread underneath. (Watch You Tube videos on "bread scoring" or maybe even just how to make sourdough bread, but don't blame me if you get hooked!)The second time I made sourdough bread without the lining in the banneton and realized how some artisanal breads get that pleasing pattern of concentric circles on them. I had assumed they were made by hand!Here's one of the nicest things about a banneton: When its final pre-bake rising is done, you can cover the dough in the banneton with a piece of parchment paper (which eliminates the need for greasing and is going to save you some scrubbing when you wash the baking sheet), place the baking sheet upside-down over that, and when you turn the whole thing over, your dough will easily fall out of the banneton onto the baking sheet without its shape being spoiled.This is for the Chefast Banneton Proofing Basket Set: Combo Kit of 9.5” Natural Rattan Basket with...Bannetons are inexpensive and come in different shapes and sizes. I bought the 9.5 inch one, with the idea that you can bake a smaller loaf in a bigger banneton, but you can't bake a bigger loaf in a small banneton. If I have persuaded you to try using one, be sure to check out its proper care. When using it to let your bread rise, you need only give it a dusting with flour (use a little sieve, or a shaker with holes in it). Rice flour is recommended for this, as it lacks the stickiness of wheat flour.According to online advice, your banneton, which is made of natural rattan, may not need water on it (NEVER dish soap or any other kind of soap!) more than once a year, if that. Just tap it to release any loose flour after you remove the bread dough for baking, make sure it is dry, give it another dusting of flour, and put it away. Out of the box I rinsed it with tap water, let dry 'til damp, then sprinkled fresh flour to coat the inside. Let it dry a few hours, then coated the inside with more fresh dry flour. Put my fermented dough ball inside, left it to proof about 1.5 hours, then inverted the banneton and the dough fell right out, and held it's shape. Worked perfectly! Baked perfectly as you can see in the pictures.This is my first banneton, and before I was using either a stainless steel bowl, or a glass bowl, neither of which worked too well. No mater how much flour (or oil and flour) I used, the dough always stuck to the bowl resulting in torn or deflated dough, yet I never considered spending the extra money on such a specialized tool. I should have got a good banneton a long, long time ago. Now I'm looking to get a second one..The Chefast Banneton is a great buy, and was high quality, well documented, and packaged well. It also comes with a liner (which I didn't use), some stencils and a dough scraper, and they even emailed me a PDF book. I think it's a nice little kit, but the most important thing was the quality of that banneton. There were dozens on Amazon, and many with poor reviews. I spent weeks selecting this one, but expected to be disappointed, but I wasn't.
