Like all oils, it is subject to going bad after a period of time. I think for olive oils you want to consume within 6 months to a year. Unopened oils might last as long as two years. You might do some research on that. That said, this is a delicious oil; I find it tends to be high in polyphenols which can give a a "hot" feel (like with pepper). I mix it with butter and put on my popcorn. A guest once asked me "what's in this that makes it hot?". It was the olive oil!
