I usually make seafood paella and the texture is consistently right. Each grain holds its shape but still absorbs plenty of flavor. It does take longer to cook than regular rice, but that’s part of the process and worth it. It’s more expensive than everyday rice and you do need to watch the liquid so it doesn’t get gummy around the edges.
