But I lost some confidence in what was being written, when I read, at the beginning of Chapter 3, the comment about how if you left your brew longer, that it would result in an increasing sweetness of the drink over time. Which, in my experience is very misleading and incorrect. The author reassures the reader, that the longer you leave your drink to ferment, the sweeter it will get. I brew my own drink and know that is not correct.I have got some good points from the book, and a great link, which I am going to investigate more fully for the answers I seek. I am still unsure at what point to compost my s c o b y.Another point I have to query. It was in the directions on making a brew to produce your s c o b y. It is stated to boil the water and add the sugar, then add the tea bags. My father is an English tea drinking man, and I spent over 20 yrs of my life in that country amongst tea drinking enthusiasts, and I have always believed it important to let the tea brew in fresh boiled water alone, no sugar until after brewing. I don't know if that is a valid point at all.So, some criticism. Only because this is a subject that has brought up so many questions amongst the hoard of friends and myself who have been brewing for about a year now, with many as yet unanswered mysteries. We all just want to get it right, and do the best for the culture. This book tells where it came from, it's history, it's benefits and the step-by-step process of how to make it and the best ingredients to use. Very interesting book. A great read and I found so helpful.Definitely worth the buy. I high recommend.
