We are both Italian and grew up on salami you can keep this out for at least a week but we have left it out for two weeks. If you slice it, the salami will become dry so if your traveling don't be tempted to slice it up. It will be fine in your luggage but putting it in a refrigerator when you travel from hotel to hotel will guarantee freshness. We cannot do that without eating it so buy lots of it! It could probably last a lot longer but I haven't had to experiment. **Q: Does it have preservatives like nitrites in it?** A: Yes, nitrates and nitrites. I don't taste them do it must be a low concentration. Just for info this is the best tasting one I've found. You are rarely able to remove the casing but it is still good with it.
