Extremely fresh, a month or more to go on the expiration date. The bloom is pungent, thick, moist and has that unique smell letting you know the salami inside is perfect and crafted with love. Peel off the paper underneath to reveal an incredible 32oz of dry salami perfection, firm, cured to a fault, moist inside and a wonderfully complex but clean taste. Use your knifework and slice it paper thin, I love this served with bourbon-bellavitano cheese, it is pure heaven.Columbus destroys Gallo and Boars Head, they're not even in the same league. If you like them, you have to try Columbus.Kudos to Taylor, they shipped quick and it got here quick, product is perfect. I have been eating this product over 60 years and it brings back so many positive memories. I can't often get this product in the local markets so I rely on Amazon to fulfill. I am a fan of slicing my own thickness depending on my needs for a given dish, a little thicker to put into salads, very thin for making appetizers or putting on crackers. It is rich, "porky," well seasoned, and wrapped in a paper skin. I haven't needed to refrigerate it, but it does hold up well there, too.
