For those who haven't had them before and to use familiar terms, kippered herring is somewhat like tuna in consistency and texture. Yes, they smell a tad more fishy than tuna typically does, but this brand wasn't overwhelming. It's just there a bit. Although packed in oil, it drained easily enough, and I decided to cook mine by frying in a smidge of olive oil, with salt, pepper, a shake of Old Bay seasoning, and a few tablespoons of finely chopped red onion. Then I served it with eggs (hard-boiled, in this case). Cooked, the fishy aroma is virtually unnoticeable, and tasting it, the smoke flavoring comes through. The texture is crumbly, yet not dry (I didn't overcook), and I noticed no bones or other problems—at least not with the first can I tried. I bought these kippers mainly because I wanted more canned fish options available besides albacore tuna and the like, and these were significantly less expensive than the single brand carried by my local grocery store.
