I eat a ton of home made soup/ramen and usually do vermicelli rice noodles for a little less calories( not much lower though) and I do like these in my ramen, they take on flavor nicely, but I can’t see them being a pasta replacement for like spaghetti or Alfredo. The texture seems to stay firm which is nice in a soup cause I was honestly worried they would be mushy. But the texture doesn’t seem right for an Italian dish.
