This was my first time using any gluten free flour and when I read it was made by a pastry chef with a daughter who has celiac I decided to try. I split a cookie recipe in half in case they didn't turn out. I was unable to tell the difference in a side by side taste test. The unbaked dough had the same texture and felt the same as the half I made with wheat flour. Cookies took the same cooking time and held together well after baking. Update 4/30/20: I've made additional cookies, Snickerdoodles this time, swapping the flour cup-to-cup and keeping the rest of my tried and true recipe the same, including oven temp and time, same as I did with the peanut butter chocolate chip cookies I made previously. I could tell a slight difference in texture, but the taste was the same. Both varieties of cookies held up well (I've heard from others that gluten free stuff has a tendency to fall apart.) Then it was on to my banana nut bread. Again I swapped cup-for-cup and it came out perfect and I'm no slouch at making banana nut bread. I have about 1/2 cup left from the two bags, so I will probably try it the next time I need to make a roux and see if it works as well there too..
