(I've got a great butcher). This is just what I wanted for doing my own smoked meats. Great quality paper.You can even use it for drawing paper, has a good tooth for colored pencils and gives your drawing an antique look. ### ⭐⭐⭐⭐ Like the Old Meat Market BBQ *by T***G on January 12, 2018* This is great for wrapping brisket. I always used foil for the TX Crutch but it would just steam the brisket and make the bark moist. This butcher paper absorbs the excess, let's the brisket breath and the bark comes out the way it should be. Very cool. Unfortunately, I bought the smaller size. Make sure you get the bigger roll in width as I had to lay the 2nd piece halfway up to get enough coverage. ### ⭐⭐ Not what I was expecting *by L***D on September 25, 2017* I've asked for a FDA certification letter and have yet to receive it. Also received this in a paper tube before, now shipped in plastic bag which is not nearly as nice as the storage tube.
