I've tried many things - mushroom, seitan, jackfruit, soy, pea-protein, TVP, etc., and was never really a fan of the hard jerky styles. I found suitable replacements over the years, but I decided to give the old-fashioned style a try again. I must admit, having had this several times I'm beginning to become a fan over all the other styles I've liked better. With the other forms of jerky, it's more of a snack - you grab some, chew on it, and swallow like you would any other filling snack. With this type of jerky I can grab a small amount, start to chew on it, let it sit for a bit, chew some more, etc., and actually "savor" the product before swallowing and getting more.
