Not the same as bone in. Bone in gives you more of a tender roast. However, for boneless prime rib — well done isn’t the recommended cooked temp. This is an expensive piece of meat and to have the experience you’d want out of it —you want it n a 225 degree F oven: Medium-rare: 30 to 35 minutes per pound Medium: 35 to 40 minutes per pound Medium-well: 40 to 45 minutes per pound. Anymore more than that, it it’s just going to not be the correct tenderness you want. Pink is fine it won’t harm you and it’s very common for prime rib experience! Medium well will have some pink. Well done gets it less tenderly- In my opinion it just ruins the prime rib experience it’s meant to be. Everyone has their preferences. But this is how it’s done in restaurants & After you cook the recommended time I shared, Allow 30 minutes for resting in the oven —followed by increasing the temp to 500 degrees the last 10 minutes to get that nice sear on the outside.
