About this item PURE & NATURAL: Purple corn flour is an ancient food from the Peruvian Andes. Cultivated at over 10,000 feet above sea level, the normal yellow colour of Zea mays turns purple. The unique difference between this type of corn and normal sweet corn is the massive amount of antioxidants that come from the purple colouring. BENEFITS: Purple corn is loaded with anthocyanins which are the antioxidants that are beneficial in fighting free radicals. In fact, purple corn has one of the most powerful of anthocyanins in existence. Purple corn is also high in dietary fibre, vitamin B6 and phosphorus. There are source values of vitamin B1, B3, potassium, magnesium, zinc, copper and manganese. SUGGESTED USE: As a substitute flour, purple corn can be used in a ratio of 1 to 3, with 2 parts other flour. When used in baking, this flour will give a dark purple colour to bread, biscuits and cake. This flour is also neutrally gluten free but is packed in an environment where gluten products are packed. QUALITY & MANUFACTURE: There are no artificial fillers or bulking agents in this flour. The corn has been slow dried and then milled into a pure powder.
