Will this unit power a single serve coffee maker?

No, not for my little coffee maker. Coffee makers are a surprisingly heavy load.

Has anyone else experienced the plug getting hot? I only had it plugged in to the cigarette lighter for about 30 seconds and the tip was extremely hot

I've only hooked it up to a 12 volt when I went ice fishing. Ran it three nights in a row, using the post clips. No issues at all.

Does it works for a water pump ?

I believe it should, I haven’t used a water pump for it but if it has a power outlet and is within the power voltage. It should work.
