Does it increase the shelf life of bread?

No. It improves flavour, colour and rise. If you are making bread at home and you ensure that the bread is proofed twice and kept in an airtight container after baking, you should get 5 days shelf life. You can also freeze bread and toast from frozen-that's even better than the day you baked it!

Can you turn diastatic malt powder into non-diastatic’s, say by roasting them?

I have done so a I was happy with the result.

I believe you could make your own malted milk by adding this to powdered milk - and then make the pancakes.
