These are beautiful, just right thickness AND high quality and so easy to use. I didn't have to use flour for dusting as it so nicely cut through the biscuit dough! Also the rolled top effectively protected my hands. Plus they washed up shiny clean in the dishwasher.

I bough this set to get an exact size for making peach fried pies and i needed one that was the exact size of our pastry folder. This set filled the bill. They are strong enough to stand up to use and have very sharp and thin walls which is what you need for biscuits and pastry,

I have no idea what these could be made out of, but I'm pretty sure its not steel. The weight is wrong, and the texture too... silky? I'm not sure. I'm no metal expert, but I've used a lot of cookware in my life, and these just don't feel like steel. They work great, but they're also not terribly sturdy feeling. Be careful not to drop 'em etc. as they'll definitely dent. That said, I make a lot of biscuits and they've been perfect for it and are nice and sharp. I'm careful to wipe them down immediately and wash and dry them by hand, so I'm not sure if they'd rust or otherwise oxidize
