Woul these fit an 03 epiphone les paul standard?

They should work just fine.  I haven't tried them specifically in an Epiphone. Your frets may be on the wider side; however, 12" radius and medium frets is pretty common for most modern Les Pauls. I'd be very surprised if they didn't work.
If you have access to a caliper and can measure the crown (the width of the exposed part of the fret), if your measurement is around 0.085", then you're fine with this fretwire.
If your measurement is closer to 0.102" then you have a wide fretwire.
However, with all of this said, the crown has more to do with your playing preference and comfort.  It's the width of the tang which matters in terms of installation.  These should be around 0.023". If you have removed a fret from your guitar, you can measure the tang.
In any case, I have used this in various "Gibson" compatible fretboards without any problem so, like I said above, you should be fine.
