I want to check an air leak inside a toilet pipe. Could this plug goes approximately 10 inch into the pipe? The length of the air hose seems sufficiep

Yes, this plug will stop the air/liquid 10" into the pipe. Just make sure you can see/reach the end of the plug so that you can release the bladder to remove it.

Will it take any shape?

The bladder is designed for a pipe-seal application, with the thick rubber bladder construction. I'm not sure what type of shape you need the device to take, but a pipe is best.

When using water, how do you release the pressure to remove it? Just turn off water? How fast will it deflate? Thanks!

When using a GT Water products TP123 test plug, and inflating it with water, you should have a shut off valve so that the plug will stay inflated for as long as you’d like. When it is time to remove the test plug, you then open the shut off valve and it will deflate immediately. You don’t leave the water on to hold the pressure. can this be used to prevent floor drains from backing up during a storm?

With the correct size to fit the pipe, and inflated properly, it would probably work as it is pressurized to temporarily block the line from allowing water into the line. However, if this is a common problem I would recommend installing a backflow prevention.
