does this grind for drip and pour over coffee as well as espresso?

Barata makes two versions of grinders: this one has a stainless steel conical burr, which is optimized for fine through coarse grinds, but perhaps not as fine as you would like for espresso. The ceramic flat burr is optimized for espresso, and may not adjust as well as you would like for coarser grinds like French press. I believe either can be used for a medium grind. It may be possible to get both for the same grinder, but I’m not sure about that.

Virtuoso+ and Sette 30 are the same price. Anyone compared the two?

Wiley's correct- the 30 is designed for espresso. The coarsest grind on it is barely useable for drip, not for Chemex, or pour over, or french press. The Virtuoso+ does the full range of coffee prep.

Does this have the same burr as the encore?

No. The virtuoso has upgraded burrs.

I weigh my coffee beans and grind all of it. I can’t have any coffee retained in the grinder. How is the Virtuoso in this respect?

This is my first burr grinder so I can't compare. I can say it is not zero retention. Our coffee is always weighed to each of our individual liking with no complaint. Might I suggest going to Youtube and scanning reviews on zero retention grinders. I remember seeing one by James (somebody), I can't remember name but he reviews coffee equipment. The grinder may have been Niche Zero. If so, prepare to shell out about 600 bucks. We love our Virtuoso +.
