Do these need refrigeration after opening?

Good Lord people, no, do not put in fridge. I am Italian (have the passport and everything) and an Italian grandmother dies every time these are put in the fridge. They are fine in cabinet. They are cured and in olive oil. Nothing is growing in there. I mean, if you leave them there after opening for a year, ok, but if you do that you shouldn't be buying these. They are too good to let sit. Eat them whole, wrap in basil, put on that cheese pie you got delivered, melt them into your Sunday gravy (you do put chovy in your gravy right?), plop them on literally any salad, the list goes on....and on....and on. Just don't ruin the sublime texture by putting in fridge.

Any idea how long the jar will last in the refrigerator once opened?

They arrived in cold pack so I kept them refrigerated. I love them so they do not last long, but they are well preserved so I think they should keep at least 6 weeks or more, if you can refrain from eating them. lol

I love these anchovies… They are less salty than others I have purchased and much more meaty. You can use them in anything/everything from omelettes to pesto! The only problem I have is that they went up $10 since I purchased them last so I bought another brand which I’m not happy with because of the amount of salt. I hope this helps.
