what amount of wall space will this cover?

Coverage depends entirely on how you apply it. I needed to match a heavily textured wall so had to apply it thickly and then trowel lightly to produce the same flattened and smeared lumps as the original wall. In that usage one can covered about a 3 x 3 foot area. Applied lightly I estimate you could cover 2-4 times as much area.

Can this be used over old wallpaper? How about paneling?

Ranae, The straight-up answer is "I don't know".I've only used it on new wallboard and over existing texture.But it is VERY sticky, and I expect that the product would adhere well to either wallpaper or panelling. And it is solvent-based so there is no water involved that might tend to "unstick" wallpaper that has been installed using water-based paste. Based on my experience, I think it will work for you.
