Update 2 1/2 years after purchasing first knife: I just ordered a replacement for our blue handle knife after 2 1/2 years of daily use, this time I picked green! My husband and I are plant based, always chopping up veggies and fruits, so this is the perfect knife for us. As you can see in the photo there is obvious staining and chips, one chip being larger than the rest. The big chip was from trying to slice through the stem of a squash last fall (a big no-no). I’ve continued to use the knife daily even with the chip and it works great, although sometimes slightly catching on that spot. I finally decided it was time to replace dear Blue. This is my go-to knife that fits just right in my hand and is practically perfect for every cutting job! Order this knife, I’m sure you’ll love it as much as we do! Old review: We ordered this knife along with a paring knife and they are wonderful! We only cut fruit and veggies with them, and they are super SHARP! Review 2-1/2 years later
I love this knife!! I've been preparing meals for many, many, many years and have never had a knife this great. I've been using it almost daily for the past 2-1/2 years and it has remained sharp as a razor. It is easy to use, the weight is good, perfect size and the blade is phenomenally thin and sharp. I can slice the thinnest slices ever. It is great on meats, fruits and vegetables (even fresh tomatoes) and has done a beautiful job on anything I slice, chop, peel, etc. Now, here is the unbelievable part. A couple weeks ago, I dropped it on my ceramic kitchen floor and it broke in half. I was desolate! I remembered that there is a life-time guarantee so I wrapped it up and returned it to Kyocera, hoping, but not really believing that it could be repaired or that it would be replaced. To my utter surprise and delight, Kyocera sent me a brand new replacement. I can't say enough about how much I love this knife or how much I appreciate the company's great customer service. Now, my favorite knife is back in my Kyocera knife block along with her sister paring knife - also from Kyocera and also a great knife.

One of my favorite knives
One of my favorite knives. I own a set of expensive stainless steel knives, but I bought this one to replace one that broke. Cuts well and it’s comfortable, but since it’s ceramic, it is prone to chipping or cracking. Despite that, I love this knife and use it often.

Don’t buy
Loved the knife initially, but it chipped within a week. kept it because I liked how sharp it was and then yesterday when I was cutting an apple it just broke in half. I’ve had the knife for two months. I’ve called customer service and they sent me a link to further explain what occurred and have not heard back from them after several different emails sent to them. I would never buy their product again. Ps finally heard from customer service and they claimed they do not warranty that type of breakage???!!!! it begs the question what type of breakage do they warranty— because it chipped within two weeks and broke in half within two months! outrageous!! will never buy anything from this company again. Beware anyone who buys this product as you can see in the reviews that many peopl for people state their knife broke in two!!

Best for veggies!
I am a chef and have been using these knives for well over a decade now. I have purchased more than 10 (for my workers as well as myself to use). While they are sensitive to banging around, and can break if not carefully set down, they are by far the sharpest best tool to use in my kitchen Refrain from using on cheeses and thick hard things, as the porcelain could snap… but the directions do say that as well:)

My favorite knife
If you've never used a ceramic knife before, I highly recommend starting here. It's the perfect introduction to the wonderful world of ceramic cutlery, and although I own the lethal-looking Kyocera Advanced Ceramic Revolution Series 7-inch Professional Chef's Knife, Black Blade as well, I find myself reaching for the Santoku 99% of the time. Why? It's the perfect size and shape for a vegetarian kitchen. The handle is supremely ergonomic (if somewhat slippery when wet), and the blade is perfectly balanced. Don't believe the hype about the merits of hulking German steel blades—if you cook a lot, you want something light and fast that won't wear out your tendons chopping parsley. The experience of cutting with this knife is totally unlike using steel. You place the blade against something, apply the slightest whisper of pressure, and suddenly the blade has gone through that something and is resting on the cutting board, awaiting your next command. It's almost spooky how sharp this thing is, but the superb handle design and blade shape never make it feel unsafe. And it seems to stay sharp indefinitely. I got mine in December of 2013, and aside from some small and entirely cosmetic nicks in the blade, the knife still performs like it did when new. If and when you manage to wear the blade out, you can mail it to Kyocera for free resharpening. Between this and the Kyocera Advanced Ceramic Revolution Series 3-inch Paring Knife with Red Handle, White Blade , you can glide through 90% of all prep. I'd recommend keeping a cheap cleaver on hand for grittier work like cutting squash and mashing garlic, but for almost everything else, the Santoku is downright surgical perfection.

Great knife but not long-lasting even with careful handling
I like this knife a lot but my first one lasted 5 years before breaking, my second a week (returned), and now my third one broke after a year. We treat this knife well but I’m not bothering reordering, I just don’t think it’s worth the unpredictability!

Love it.
I have two of these now, and I love them both. Lightweight and sharp. DO NOT use on frozen anything, not even a little red bell pepper strip. They do warn you but I didn't read it when I received my first one.

Ottimo coltello
E' un coltello molto affilato, taglia verdure, frutta, carni e quant'altro anche se sono molli e di solito si "spappolano" con altri coltelli questo incide e taglia di netto. Il colore non è granchè ma considerando che costa 20euro in meno solo per quello visto che il modello è identico a quello black è un ottimo compromesso.
