Are the edges of the paper purple or white?

The edges of the paper are purple.

Can this cardstock be painted with watercolor?

Im not certain but as with most cardstock it has a slightly shiny, very smooth surface that I believe would make it difficult for watercolor to adhere to. It is not a porous material.

Any idea of the weight for each sheet? I need letter weight paper.

This is not regular paper. This is cardstock size 8.5" x 11", Includes 50 pieces and Acid and lignin free. It does not say the paper weight. I have heard plenty of people say this is considered Heavy Weight Cardstock but I can not see anywhere on the package that it explains what kind of cardstock. However if you are wanting letter weight paper this is not that for sure as this is Cardstock.
