Are the gold jump rings gold plated? Are they gold filled? Or will they turn green in a few years? Thanks ...

They will turn.....nice kit though.

What is the large gold ring used for? What is it called?

The large gold ring is used to open jump rings. Put it on your finger, the you can use you hand or a tool to open the jump ring. Some people likes it, I personally never use it. It is up to the person.

Do any of these findings (earring hooks or jump rings) tarnish under normal circulstances?

I have used them for about a month and I haven’t seen any tarnishing yet.
