has anybody swam with these multiple times?  do they work/survive it???

I have not personally done this, but IPX7 rating is pretty specific (quoting from Wikipedia):  Ingress of water in harmful quantity shall not be possible when the enclosure is immersed in water under defined conditions of pressure and time (up to 1 meter (3 ft 3 in) of submersion).  So I would say if you're swimming laps or something that doesn't require you to exceed the 30 minutes per session and not going under more than 3' they should be good for repeated use.  As far as survival, I'm not sure.  Water can attenuate the signal, but it should be safe to try it out, within the restrictions above.

I’m having trouble getting them to connect together when I first got them they were fine but after I tried to just use one they would never connect

Please try to restore to factory settings:
Hold down the MFB button for about 6 seconds during charging,
until both LED indicator flashes with blue light 3 times to restore the factory settings.
First make sure that Bluetooth is off for all Bluetooth-enabled devices, 
then take earbuds out of the charing case at the same time, earbuds are on and pair with each other automatically,
meanwhile, the blue light of the left earphone disappears, the right earphone red and blue lights flash alternately,
now turn on the Bluetooth of your phone, clear previous "TWS880" connection records, search and connect again.
If it is still not work well, clear record repairing "TWS880” again. please try more than a few times to succeed.

Do both ear buds work when talking on the phone?

These ear buds work to hear your phone call but I have never been able to talk on the phone with them. The other person cannot hear you using these

How is the phone call quality?

I immediately tested these with my mother on the phone, who is a bit hard of hearing.  She could hear me well outside and I did not sound muffled to either of them.  I also did a recording test and found the recorded sound to be pretty good, not better than the iPhone's built in microphone but certainly better than my LG HBS-820 or the HBS-920 (my previous headsets).
