1810 stainless just needs to be cleaned and used. It’s not like cast-iron or other pans that we used to season with oil and slowly bake in the stove. This stuff is ready to go after you clean it up. You’re gonna love what’s coming, and there is no need to season it You will be surprised at how easily it cleans up.

What size frying pan will fit with the lid?

The lid does not fit any of my frying pans, including a small 8" pan. I suspect it might fit a straight sided 7" fryer. It does fit several other pans however. These are amazing pots! The ones I have still look like new after a number of hard use years! I suspect they will be like Grannie's old cast iron chicken fryer - passed down through the years to family!

Does this stainless contain any aluminum?

These are multi layer pots, the complete composition would be on the manufacturers web pages. I beleive Copper and Stainless is all. They are all Stainless on the outside.
