This is a direct translation of the instruction at the back of the package. To 200 grams of Shiratamako, gradually add 180 to 190 ml of cold water stirring continuously. It will start to require strength to mix. Mix well until the "dough" acquires soft texture that feels like earlobe. Not enough water - the dough keeps falling apart and cannot be shaped into a ball. Too much water - sticky mess that cannot be handled. Paper towel can be used to absorb extra moisture. Make small balls with your hand. The size depends on the ultimate purpose. You can press the middle of each ball to create a small indentation. Drop into boiling water. Wait 1 to 2 minutes after they float to the surface. Scoop out and drop into a bowl of cold water (does not say icy cold). They are ready to be used in a recipe that calls for them. Can be stored in freezer for about a week - boil again before using. Shiratamako does not become hard when cold.

Do I need to sift it to remove the clumps? Or just use as is?
