Will one bag be enough for a 5 gallon tank?

No. It barely makes one layer. I have mine on top of sand as a decorative feature.

Do these river rocks have heavy metals or copper that could leach into a freshwater aquarium?

Not sure , but this pack of rocks is so small you would need 50 plus to fill up a tank and I have a 15 gallon.

Are these coated in anything like Paraffin wax?

They are not coated with anything.

Maybe one square foot. Very small amount. Most rocks are about an inch long. They look very nice.
