Hi will this work on low pressure gravity flow?

According to the listing, water pressure at the valve should be 5-PSI or more (some say 8-PSI.)  Pressure created by a gravity system will depend on the configuration of the system.  If the water tank is elevated, pressure at ground level will be higher than if the tank is at ground level.  The higher the tank, the higher the water pressure at the valve (ground level.)

Using a value of 0.433 PSI per foot, it would require the storage tank to be almost 12-feet above the float valve if you need 5-PSI at the valve.  If you need 8-PSI at the valve, the tank would need to be closer to 20 feet high. 
(To supply reasonable pressure for general household use, the water tank would probably need to raised to about 100 feet.)

How do you mount this

It must be mounted in the vertical position. I have 2 of these used on 2 different bulk water tanks. Screw it onto a a threaded pipe and position it at the desired water level. The valve must be solidly secure to work properly (I used a bulk head fitting attached to the accessed lid with a cam lock quick connector) One of the valves has been in use for around 4 years the other 2 years. I want a 1" Hudson Valve, but in the description it doesn't say this is 1". Can you confirm please

The threads are 1” for sure.  I just installed one last week in the trough in my arena.  I must say that the newer ones are improved over my older ones.  The valve diaphragm will need cleaning periodically because algae and scale will gather inside the valve.  The Nelson valve is our best unit compared to others we have used.  Very reliable.

It doesn't explain how the unit mounts to the tank?

It doesn't mount to the tank, it threads onto a 3/4" or 1" male fitting. In my case, 1" pipe ran into a fish pond and this valve threaded right on.
